These muffins are amazing and they were suggested by an amazing friend of mine. She is truly inspiring!  She and her husband are examples of living a healthy lifestyle in every way – mentally, spiritually, and physically.  They are also great examples of how to create the life you want!  You can find Joy here. This is a recipe that her entire family raved about!  And, she had to share it!  I’m so glad she did because we love it here also! There is NO FLOUR and NO SUGAR in this recipe. So, I spent a couple hours going to the grocery store and the health food store to get ingredients for two different recipes.  Of course! When I get home, I am missing an ingredient for each of the recipes that I intended to make. That is standard for me!  So, I switched gears and picked a recipe that I had all the ingredients for, or so I thought….and I started.  I didn’t have WW pastry flour but did have WW flour and they turned out just fine.  BTW, I used dark brown sugar so mine are a little darker than the original recipe.  **Tip: don’t tell the husband or kids that there are prunes in these cookies!** Ingredients: 1 cup pitted prunes 1 cup walnuts ...

I wanted to take a minute to clarify what I’m doing here with my fertility series. I am sharing with you what I have found in my MANY HOURS of reading on nutrition. I am telling you that I research all things nutrition and that it is my passion, including fertility, pregnancy and nursing. I had an assignment this week in my Masters class to list 100 of my ethical beliefs in one-sentence statements.  They were supposed to be ethical beliefs and not personal beliefs, but I had a really hard time with ALL ONE HUNDRED!  So, I thought I’d share them with you and encourage you to do the same. No surprise here….TRANS FATS ARE BAD!  Basically what I’m coming up with in ALL of my nutrition research is EAT REAL FOOD.  Trans fat is NOT real food!  The effects of trans fats are not all known, but we do know…. Trans fats are not real food!  Eat real food! Trans fats = greater chance of ovulatory infertility 4g / day of trans fats showed effects on fertility (BTW, 4g = one donut, 2T stick margarine or 1 med order of french fries!)
