I’m sorry that tonight my brain is too fried for a “teaching” post as I promised. I am working on a few different posts – one on carbs and one on fiber that you should be seeing next.  It’s been a rough week at work and a demanding week for my Masters Classes also! As many of you know, I am redesigning FIToriBLOG again. You’ll see the new design soon!  It’s a really tough process to try to find a logo and design that captures I am and what I see for my brand, which essentially is me and what I want for myself and all of you. I want it to be feminine yet strong. It’s a tough process! I think we’re there. You might remember these cookies from my recent post about my Facebook Fairy & kitchen tools. These cookies are crunchy on the outside and chewy on the inside…the perfect cookie texture…. Ingredients 1/2 cup Whole Wheat Flour 1/4 cup Ground Flax Seed 3/4 cup Old Fashioned Oats 1/4 cup Light Brown Sugar 1/2 teaspoon Baking Soda 1 teaspoon Baking Powder Pinch of Cinnamon (I used extra…always do) 1 teaspoon Vanilla (I used extra…always do) 2 Tablespoons Canola Oil 5 Tablespoons Maple Syrup 1 Tablespoon Molasses 1/4 cup Raisins Directions Preheat oven to 350 degrees. Ingredients 1/2 cup unsalted almonds, toasted (I explain how below) 2 Tablespoons extra-virgin olive oil 3/4 teaspoon grated lemon zest 1 tablespoon fresh lemon juice 3/4 teaspoon dried rosemary 1 garlic clove 4 (4- to 5-ounce) boneless, skinless chicken breast halves Directions Preheat oven to 350 F. Toast almonds in the oven by spreading the almonds in a single layer on a rimmed baking sheet.  Toast in the oven until fragrant and lightly golden, approximately 5 to 6 minutes for almonds. Preheat oven to 425 F. Until we have our own kids, you’ll have to settle for my furry kid in my photos! :) I had to post something to apologize for my lack of posting lately!  I am switching over my hosting from GoDaddy….sorry GoDaddy but there have been WAY too many issues with my page not loading. I’m sorry if some of you have experienced this! It has made me crazy!!
