First things first, I’m sorry I have been MIA a bit in the last few days and my posts have been more recipes than nutrition or exercise tips! My brain has been fried lately and I’ve had no bites left for blogging.  What’s new? My LAST quarter of Masters classes started this week.  Add that in with my full time job, nutrition certifications, kitchen renovations, etc. and I’m just trying to juggle it all! With our kitchen renovation, we decided to get a new fridge. Someday I may share my mother’s secret family cookie recipes that I grew up on. They are heaven. Someday I may also try to tweak them to make them healthier, but really, why mess with perfection?!  These REALLY ARE almost as good as my mom’s Jumbo Chocolate Chip Cookies!  Really! These are a new favorite in our house!!! moderately healthy recipe | Mini WW Chocolate Chip Cookies

I didn’t run out to get ingredients for these (read: right foot still swollen). I tried to find a recipe to make with what I had and also fitting into my husband’s requests for the day. Why do I call these moderately healthy? Read my post here about levels of health in baking.  This recipe uses butter and sugar, so it’s not healthy by my standards but for a fun treat, it uses WW flour and you can use all unprocessed ingredients to make it a better choice than Oreos, for example!  But be careful if you’re watching your wasteline! I talked about the camera my sweet FIThubby got me for Christmas in this post. I also stated in that post that I am not a photographer, but I sure do love using my camera! What fun!  I have to tell you that I purchased a ton of books, have done a lot of research, asked a lot of questions and PRACTICE as much as I can.  I still have a tremendous amount of learning to do, but it is TONS of fun for someone who loves photos as much as I do! This is one of my NEW FAVORITE dishes! I just love it!  Remove the chicken and add more beans for a vegan dish! Ingredients 1 T canola oil 1 lb boneless, skinless chicken breasts 1/2 tsp chili powder (I used much more) 1/2 tsp cumin (I used much more) 1/8 tsp cayenne pepper (I used much more) 1 cup uncooked brown rice (I used less) 2 cups water 15 oz can black beans, rinsed and drained 15 oz can diced tomatoes w/ jalapano peppers 15 oz can no-salt-added corn, drained 2 garlic cloves, minced Chopped fresh cilantro (optional) sour cream (optional) Directions Read the instructions all the way through. gluten free recipe | Almond Butter Choco Chip Cookie

These are so incredibly easy and freakin’ awesome!!!  They taste amazing!  I must say that my Flourless Peanut Butter Chocolate Chip Cookies are my favorite, but these are healthier Ingredients 1 cup almond butter (small  8 oz jar) (if you use a larger jar, make sure you mix up the jar first) 3/4 cup sucanat 1 large egg 1/2 tsp baking soda 1/4 tsp sea salt 3 oz 70% or greater dark chocolate – broken into pieces Directions Preheat oven to 350 F.  In a medium bowl, stir together first 5 ingredients until blended.  Stir in chocolate. Drop dough by rounded tablespoonfuls onto parchment-lined sheets.  Bake for 10 to 12 minutes or until lightly browned.  Let cool on baking sheets for 5 minutes.   Remove ...
