This recipe is FULL OF FLAVOR!  I’m actually making it AGAIN this week (made it last week).  We doubled the chicken and sauce and it only lasted 2 dinners and 1 lunch for the hubby. So, it went FAST!  I think I’ll triple it…all of it…including the veggies next time b/c we were fighting over the veggies! This is a new favorite. I have a bowl beside me now while I write this post!  I have gone back for seconds and thirds of this every time I start! Sorry for the slacking on posting these last few days. I posted this morning on “What the heck is a LENTIL?” because I didn’t know and the info on the bag scared me!  So, I figured if it was new to me, it might be new to you and I’d share. I don’t have time to eat healthy | bologna…grill it!

This is our grill. It gets used…a LOT!  Can you tell?! When we are too tired to cook. We grill.  When we are trying to lose weight. We grill.  When we don’t realize that the freezer in our garage was off for 2 days and we have to cook POUNDS of meat at once. I ran out of parsley. Oops.  I subbed cilantro which I am not too crazy about but the recipe still worked!  I have had it on top of my salads the last few days and I’m loving it!  I use a TON of dark green lettuce, some Greek salad seasoning, sometimes some onion and raw broccoli chopped, a sprinkle of cheese and a balsamic vinaigrette dressing.  Confession: I had it yesterday at 1:00pm for lunch and then I had the exact same thing again at 4:00pm for my next meal! recipe | Grilled Tilapia w/ lemon basil vinaigrette & capers

Trying new things is important, especially when starting to eat healthy and exploring new, healthy foods. Ingredients 3 Tbsp lemon juice 3 Tbsp minced fresh basil, divided (2 & 1) 2 Tbsp olive oil 2 garlic cloves, minced 2 tsp capers, drained (I used more) 1/2 tsp grated lemon peel 4 tilapia fillets (6 oz each) 1/2 tsp salt 1/4 tsp pepper Directions For vinaigrette, in a small bowl, whisk the lemon juice, 2 T basil, olive oil, garlic, capers and lemon peel; set aside 2 T for sauce. Sprinkle fillets with salt and pepper.  Brush both sides of fillets with remaining vinaigrette.
