The FITori Basic Juice

We built up the amount of kale we could tolerate. We started with a handful and have reached 2-3 bunches per “batch.”

This makes a 56-ounce juice jar and a half….usually. That lasts us about 3 days [for 3 of us], as long as we are all drinking it. [Juice storing post coming soon as I research the best way to preserve the juice I make!] Will your juice last for 3 days? Read Post #2: Juicer Buying Guide!

2 pounds of organic carrots

5-10 apples

2-3 bunches organic kale

When trying to decide proportions…

try for MORE VEGGIES than fruits. we are working towards fewer fruits, fewer sweet carrots and more greens.

try for MORE greens than sweet veggies like carrots

What do I buy the first time I try this? When trying this for the first time, try buying some apples, oranges, carrots & kale [kale tastes the least funky from my experiences with juicing greens]. Or pick your own mix of a few fruits and veggies. Try some different combinations. Add a straw and try it. Add more kale until you can’t stand it Then add another carrot or apple. Try it! Just experiment! If I add a new ingredient I will often juice it separately and mix a teeny shot to see how it tastes before I ruin an entire batch! That’s the beauty of juicing!!!

What if it tastes awful? I’ve found that a little citrus really helps! I’ve added an orange, lime or lemon in there to help the taste if I made a batch that was so green my hubby wouldn’t drink it. I will often juice some extra citrus juice or extra green juice and keep it totally separate. I can add the citrus if it’s too green and the hubs wants to drink it straight. Or I can add the green if I’m making a smoothie and the extra frozen fruits will help cover up the green.

What can I juice together?

I love this blog! I learn SO much! I learn FROM you and I learn FOR you! Through this blog post I learned even more about juicing and food combinations. And, as you know, HEALTH IS A JOURNEY. Your healthy nutrition IS A JOURNEY. We all start out small. My healthy journey started… with switching to brown carbs, then to real foods, etc. It takes time. You learn and grow and move slowly into the place we are today (unless you were super blessed to always live a healthy lifestyle starting when you were young…which I hope is my child but we’ll see!) My journey took me to real foods and now it’s taking me to more veggies and fruits…enter juicing and smoothies!

The point of juicing is to get nutrients into your body as fast as possible, without fiber and other things slowing down digestion. Different digestive enzymes are required for fruits vs veggies so by combining them you will get fewer nutrients from your juice! Gasp!

What about Apples? You’re in luck! Apples are neutral and you can add apples to your veggie juice to “sweeten” it a bit….but of course, keep in mind, sugar is bad and sweet sweet drinks are also bad. So, watch your sugar but I have to admit….you have to start somewhere.

Eat Fruits. It’s better to eat fruits rather than juice them because most of the fruit’s ability to cleanse the body comes from eating them whole and the fiber included.

My advice? Start with a juice you can drink, your family can drink. And work toward adding more greens, more vegetables and lowering the amount of fruit! Don’t stress. Try it.

Juice prep.

I learned early on that it’s important to prep all at once BEFORE starting the juicer. The juicer should be on for only 30 min at a time so it’s important to prep all the veggies at once. I have also read that having your veggies room temp means they contain more nutrients. Not sure if that’s true or not, but it makes me feel better about taking forever to complete this whole process….b/c as a mom, sometimes in the middle of the process…something comes up…and juicing takes a back seat for a while.

While I’m getting everything out, I put the apples, carrots & greens in the colander & start running their “shower.”

Once those are clean and scrubbed (I haven’t been using a veggie wash, but if you guys have a recommendation for one and reasons to use one, please share! I’d love your knowledge!), I chop the apples into 5 pieces each apple. Just small enough to fit into the juicer and also to cut the seeds out. I cut around the core. [No apple seeds. See info in the cautions below.] I chop off the ends of the carrots and then chop them small enough to feed through the juicer.

Lessons Learned.

Kale and leafy greens tend to get jammed in the juicer and have a hard time coming out. So, I’ve learned to add the kale closer to the beginning and use the carrots and apples to help work the greens through the juicer. This helps me waste less kale/leafy greens & the juicer is easier to clean in the end.

I’ve also found it’s good to save some of the green juice on the side to add in later if one member of the house has a harder time drinking the green stuff. The greener juice is sometimes better hidden in a smoothie.

My hubby is more adventurous than I am. He found a “recipe” in the book Super Juice including horseradish. Wow. I mean wow. It HURT him. So….start out small. No horseradish to start. Start with SAFE fruits and veggies!

I didn’t have any issues with gastrointestinal discomfort but there are warnings to take it slow so you don’t end up in the bathroom all day.

Cautions & Warnings!!!!

Apple Seeds. I learned this warning after feeding us juice with apple seeds for a couple weeks! Yikes! Here’s the “skinny” on juicing apple seeds on snopes if you want more info. Apple seeds contain cyanide compound. Remove apple seeds before juicing!

Beet leaves. Beets can help to breakdown excessive fats in the diet and stimulate the gall bladder to inject bile into the liver. Start with just a few beet leaves, especially if you limit the amount of fat in your diet. You can overdose causing you to feel queasy or make you throw up!

As I mentioned in Juicing Post #1 I do recommend certain fruits and veggies should be organic. Since the pics above in December I have started getting my fruits and veggies delivered from Fresh Connect so the bag of kale is no longer accurate. I do use organic now.

What kind of juicer?

When researching juicers, I went to my favorite source, the place I started with my information, gerson.org for their Guide to Juicers. Here’s a brief overview of the types of juicers. (NOTE: READ THE WHOLE LIST!)

Centrifugal Juicers. The juicers you see everywhere today are mostly these. The Gerson Institute does not recommend these for any use & lists them as UNSUITABLE on their site. According to the Gerson Institute, these juicers “expose the juice to heat and oxygen, killing off the essential healing enzymes in the juice. These juicers have difficulty juicing leafy greens [and] more produce is required to make less juice.” (source)
According to my research:

these use more produce (more expensive in long run)

the heat kills healing enzymes (the reason i’m doing this is to get the benefits of the healing enzymes!)

they have a harder time with leafy greens (a huge reason I’m doing this!)

must drink the juice immediately or the juice starts to lose its health effects (I don’t have time to juicer & clean a juicer every day. I just won’t do end up doing it.)

The Norwalk Juicer. This is the most effective on the market. It retails for $2400. If I had cancer I’d invest in one of these. It’s not necessary or realistic for most who are just juicing for good health.

Masticating Juicers with Separate Hydraulic Press or Champion Juicer. This one is just more work! But can be good also for cancer treatment.

Masticating Juicers. These are recommended for non-malignant conditions. This is our juicer! This juicer is as close to the masticating juicer w/ separate hydraulic press that you can get. These preserve the enzymes and are pretty efficient at extracting pulp. The brands recommended by the Gerson Therapy for non-malignant conditions are the Champion, Omega, Green Star, Green Power & Angel.

Blenders. What about just getting a blender and not a juicer? Well these are blenders & not juicers. So, they make smoothies and not juice. They do NOT extract the pulp. The point of juicing is to get the nutrients without the bulk so that you can ingest a larger quantity of nutrients that you could not physically eat if they were whole or blended. I decided to invest in a juicer and then I use a cheaper blender to make my smoothies. That’s just what was most important for me when I started on my journey. There’s nothing wrong with blending smoothies! There’s a place for both juicing & smoothies in a healthy diet. Smoothies are a great way to get more veggies and fruits into your diet! It’s also faster to digest than the whole food, though not as fast as juicing. Keep in mind the good, better, best thing I talk about…and I heard from The Tasty Tomato another one I love…progress not perfection. Is juicing better? Maybe. Will your family drink it? Whatever your family will drink. Whatever you will make & drink & clean. Do what works for you! But start somewhere. Try something to get more veggies & fruits into your family! No judgement here! Just happy when people are eating real foods!

FITori’s Juicer.

Omega Juicers (formerly Olympic juicers) have been around for.e.ver. So, naturally, that was a great place to start for me. I love my Omega VRT350 Juicer! I got mine at Bed Bath & Beyond for 20% off. It retails for $379 I think.

Why this juicer is better than others…for me:

It’s upright which is space saving.

It’s prettier in it’s stainless steel design.

It’s not $2,000

It doesn’t use heat

The juice lasts longer

It preserves nutrients

More efficient. High yield. Low waste.

Better with leafy greens (reason I’m doing this!)

Can juice wheatgrass.

Can I really store juice for 72 hours?

A few juicers claim you can store your juice as long as 24 or 72 hours. I do it but I am definitely rethinking how to better store these juices because it’s definitely not ideal. Just 5 minutes after juicing nutrients are slowly being lost! Noooooo! So, I will be looking into ways to use my Foodsaver and glass jars maybe to store juice in more airtight containers since I do not want to juice everyday! More info on storing juices. I will be sharing my new storing info once I find a new solution!!!

Cost of juicing for health?

I really thought this was going to be an issue. I was super concerned. Turns out it’s not so bad! And it’s totally worth it to me! I would estimate about $10-15 (depending on where you buy yours) in veggies for one 56 ounce juicer jar. Carrots, apples & kale are our main fruits and veggies for our juice base everytime. I will tell you more in tomorrow’s post on my exact recipes. A bag of organic apples (10), 2 bags of organic carrots (2 lbs?), 2 bunches of kale. My advice is to start small! Anything is better than nothing. You don’t have to go on an all out juice fast right away. One glass a day is packed with nutrients! [I now get my organic fruits & veggies delivered from a fantastic place. We live an hour outside of Kansas City so I am super blessed they bring organics to me! Thank you Fresh Connect KC!]

I have not found another juice/smoothie cup that has a straw that stays in and keeps the spills down like this one with a flexi-straw! **I worry about my toddler walking around with them so I have her sit down when she’s drinking from them.
I am not a juicing authority. As always with my blog, I am sharing my personal experience and research with you to help make your journey smoother than mine. If you know more than me, share it! If you have questions, ask them! If you disagree with me, tell me why!

Cancer scares me. It seems to be everywhere these days. We all know someone who is affected. But why? What is causing it? We don’t have any REAL answers but there are tons of ideas and it seems to be coming from everywhere! As I do my research I am slowly starting to change the things in our lives that may be causing or preventing cancers. One step at a time. One thing at a time. It seems, everywhere I look I see potential cancer! Cleaning chemicals. [We clean with vodka & vinegar mostly to help this!] Chemicals in our new furniture and new homes. Plastics. Pesticides. Preservatives. Cosmetics. Foods. Paints. Exhausts. It’s everywhere. [Working on posts to share with you all that I have learned about soaps, detergents, cosmetics etc. As I find the "perfect" products for my family I will share them with you!]

The backstory for FITori & juicing.

I’ve done a lot of cancer research. It all started when I came across a documentary on Netflix a few years back [The Gerson Miracle] that mentioned the Gerson Therapy and it sparked my interest enough for me to keep reading. [If you're interested, check out these documentaries, all free on Netflix I think, The Beautiful Truth, Hungry for Change, Dying to have Known, Fat Sick and Nearly Dead & The Gerson Miracle.] It all makes sense to me. Food is medicine. Side note….

In life, I try to go with what makes sense to me. Sometimes I can’t overlook these things. My gut just says it’s the right thing to do. Some things we just don’t know for sure but we know that the risk is high enough that I feel better making a particular decision about our health.

Back to cancer. When I watched these documentaries they struck a cord with me & I wanted to make some changes in our diets. I wanted to juice to get as many veggie nutrients in our body. The Gerson Therapy juicer sounded great to me back then but I knew the cost was in the thousands. [Next post will have my Buyer's Guide to Juicing!] If one of us had cancer that cost wouldn’t be an issue. BUT would juicing fit into our lifestyle? Would we actually drink this stuff? How hard is that thing to clean? Would it be worth the cost to our family for prevention right now? I thought about it for years before actually taking the plunge!

Fast forward to a few months ago. I kept getting tugged at to watch another documentary: Fat Sick & Nearly Dead. [it's also free on Netflix.] After I did, I was sold. Sold on juicing. I knew I needed to try it. I still wanted to know what kind of juicer to get. Was there a juicer that would allow me to juice every few days not every day? How bad was the cleanup? How expensive is it to juice? Ugh…and the idea I would have to learn all about juicing. Yuck. But I felt like it was worth it.

It just made sense to me that in order to get the GREENS we need, in the QUANTITIES we need, we would need to juice it. AND, I can’t get my FITgirl to eat greens as much as she used to eat them. See it here. here. here. here. and here. I knew we needed more greens. I knew we needed to consume more nutrients from fruits and veggies. Enter our juice machine!

I hope this series of blog posts will make your life easier. It was definitely NOT easy getting started though it’s a breeze now! It’s a super simple process now….just takes max time of an hour every few days. And it’s so worth it! We enjoy our juice and smoothies and know they are so good for us!

Why juicing?

I urge you to watch some or all of those documentaries. The Fat Sick & Nearly Dead one is great for teaching you how a healthy diet full of nutrients can return an unhealthy body back to a healthy one in a matter of days. The point of juicing is to get the maximum amount of nutrients (which means removing the pulp, hence juice vs eating it) and drinking it w/o food so that it’s digested & absorbed FAST (to get all the nutrients before they break down).

Please remember my philosophy about healthy living….good, better, best. If you can’t do this 100%…the BEST way….and go ALL out…so what! Something is better than nothing! Give it a try! Do better. Do good. You don’t have to do the BEST. You’ll get there. It’s a process. We have to start somewhere. [More info on absorption and food combining in part 2 of these juice posts when I discuss recipes!]

Bottom lines about why to juice.

1. We don’t eat enough greens. We just don’t. And we won’t anytime soon. Most Americans don’t. We are not the only family with this reality.
2. We can’t physically eat enough calories in a day to get the amount of nutrients we need.
3. The nutrients aren’t digested fast enough when we eat whole foods in order to get the maximum benefit. [we still need to eat real foods, juicing is just another form of good nutrition]

Don’t you have to fast?

Now, I’m not sold on a fast yet. I’m sure they’re great, but I’m not sure I can do it…right now. I also worry about the loss of muscle mass, though I’m getting over that more and more these days as my journey into good health progresses. I do believe in cleansing foods to add to your juicing to help cleanse out the toxins! I will be working on a cleansing juice post to tell you all the ingredients I’m trying as I try them. And, what they’re good for! If you’ve fasted and have a story for me, please tell me! Comment below. Message Me. Contact Me.

Why smoothies? Why not smoothies?

At first, I didn’t do smoothies at all. I just made juice and we drank that every morning, throughout the day and in the evening if we wanted something sweet. A cup or two a day for each of us. Then, I made some juice that was a little too green!!! Yuck. How were we going to drink it? I wasn’t throwing it away! SMOOTHIE!!! Mix in some frozen fruit, greek yogurt & flaxseed and VOILA! Yuuuuuuuuuum! Now, I do a combination of both juicing and smoothies. My smoothie base is always my homemade juice. Then, I add in other frozen fruits, greek yogurt, flaxseed and sometimes “natural” protein…yet I’m still doing my research on this as well as a “real food” source!

What about the fiber in veggies? Don’t we need to eat veggies & fruits?

As I stated above in the “Why Juice?” section, we need as many veggies and fruits as we can get! But, we don’t consume enough, we can’t consume enough and it doesn’t digest fast enough in order to get the maximum nutrients we need. We do still need the fiber in fruits especially. And, I’ve read it’s actually better to EAT your fruits & JUICE your veggies. I’ll add more posts on that as I learn more. But do both!

Do I need to buy organic?

Yes! Do your own research on this. [My book & documentary list will be the last post on this series!] But, from my research we don’t even eat certain foods if they aren’t organic [grapes being one of them]. The Juicing Bible [my favorite juicing book!] has TONS of info on which fruits/veggies juice well, how to prepare them & if they must be organic. As a family, we are moving toward organic and local for as much as we can. Things with thick skins like oranges we don’t buy organic….yet. Not to say we won’t ever. But for apples, carrots, kale, blueberries, etc. we buy organic. Check out the dirty dozen PLUS list here. [BTW, more posts coming soon on ewg.org's fantastic info on household cleaners & soaps. I am finding the best out there for us and I will share those with you!]

I have been busy working. I am so blessed. I am always striving to do better. be better. live better. I am not okay with just taking photos. I want to be the best I can be. (It’s a famous slogan for a reason.) I want to be the very best photographer, CEO & COO I can be! If I am great at what I do at work I can be better at what I do at home and I can be around more!

I am working on a few things right now…..

Efficiency. I am working on being more efficient in my daily worklife. I need to maximize my time with my family and my ME time and minimize the time I work. AND I’ve been thinking a lot about only spending time doing the things I LOVE at work….this is both outsourcing and building processes to automate the things that I can.

Outsourcing. read efficiency.

Processes. read efficiency.

Rebranding. I hate the name FITori PHOTO. I just created it b/c it was easy and I didn’t know that I’d go into business. I had no idea I’d be this booked, this fast and doing this well. Hallelujah! I am working on rebranding soon. I only want to do it once…I don’t want to do this again next year so I’m taking a lot of time to really think this through!

I am feeling inspired these days from all of my learning and investing in my business! I am also doing a ton of research in my “free” time about juicing and I’ll be sharing this info soon. And, I still have a Baby Led Weaning Post that I’m way overdue on posting.

I have had so much fun with my shoots lately!!! I’m still shooting weddings almost every weekend and other sessions during the week…seniors, families, events, children, etc. Here’s my latest series that I just love. Isn’t she gorgeous?! See more here.

And sprinkled in between editing for my clients, I have to edit some of my FIToddler. That girl is full of personality and LOVES her accessories. This day was a doo rag.

I found her on a BLW Facebook Group and it turns out we have a mutual friend. Small world!

About Holly. Holly is mom to 1-year-old Miller. She holds a B.A. from the University of Maryland and an M.A. from Georgetown University. She operates a busy travel agency and spends her free time directing Voices In Praise, a youth choir of 11- to 18-year-olds who have traveled throughout the U.S., Canada, Ireland and Russia.

Straight from Holly’s mouth…er fingers

Baby led weaning (BLW) made sense to our family for many reasons — it was healthy, simple (no mashing or pureeing required!), and offered us an incredible amount of flexibility when we were traveling (and boy, do we travel).

When I was approached by the Steve Harvey show to share our family’s experiences with BLW, I thought it would be a great opportunity to let others know about this style of feeding– and how well it is working for us. I had done considerable research before starting BLW and felt confident that this method was a winner.

Imagine my surprise when a pediatrician in the audience slammed BLW. Nothing in my research led me to believe that BLW presented a significant risk and certainly — I would never put my son in jeopardy. I’m no doctor but as a well-educated, vigilant Mom, I did my homework. I walked away from the show wondering if the pediatrician did her’s. Had she read Gill Rapley’s book “Baby-led Weaning” or Dr. Rana Conway’s book, “Weaning Made Easy?” Had she done ANY research on BLW?

I am not trying to knock her credentials, education or training, but new research is constantly coming out and it impacts how we raise our kids. After all, once upon a time doctors recommended that babies sleep on their stomachs and face forward in carseats.

A Google search of the doctor revealed that she appears regularly on different TV shows. With all that media work, perhaps she just hasn’t had time to keep up with health research and different theories about how babies learn to eat.

The Steve Harvey show had an opportunity to host a vibrant discussion on BLW. They could have presented a true overview of the BLW process. They could have invited a BLW expert like Gill Rapley to join the discussion. They chose not to. I suspect that it doesn’t make for good TV but can assure you –BLW makes for great eating at our house.

If you are considering BLW, I encourage you to do your homework and read the research for yourself.
